Magma German Wine Bistro @ 2 Bukit Pasoh Road

We were recommended to come to Magma for authentic German food after a well known chef in Singapore recommended us here for good German food.

The restaurant is situated at a very quiet corner of Bukit Pasoh Road. But it is easy to locate as the walls of the restaurant were brushed in a vibrant blue on the outside.

There are 2 parts to the restaurant - A bar and a formal restaurant behind the bar.

We were very impressed with the chef. It was almost a 1 man show (plus 2 very courteous waitress) cooking everything for diners (about 16 diners including us around 1pm). The chef did everything himself - from salad to soup to mains and desserts.

We were given 2 condiments to go with the bread. One was a meat spread which tasted a bit like mashed luncheon meat. Another is a butter cheese and chives spread. We prefer the meat spread over the cream version.

We had one 3 course Set lunch with coffee or tea @ S$19.80++ and also another ala-carte order.

The set came with a Creamy Fennel soup with pan fried green shell mussles. The soup was very good, and definitely not something out from the can. The mussles were very big and juicy.

Together with the set lunch was the main course of Fish stew cooked with white wine served with rice and vegetables. While the chef was cooking this dish, the waitress brought him a glass of white wine. We thought it was for the chef, but then found out soon afterwards that the chef used all the white wine for this fish stew. The fish stew had a very strong white wine taste. And everything blended perfectly with one another.

Being a pork knuckle lover, i had this ala-carte order of Pork Knuckle "Bavarian style" (roasted) with mashed potatoes and sauerkraut (S$26). And was I glad that I ordered this very famous German dish.

With just one soft pull, the meat and crispy skin all came off the bone.

The skin was excellent. Crispy and fragrant. There were quite a bit of fats stuck to the crispy pork skin, so you may want to scrape off the fats and lards from the skin before eating it.

The pork meat was tender and flavourful. Initially I was unsure if the meat will be very dry as the skin was roasted till crisp, but the chef did a good job of keeping the meat very moist. I am sure you can see the juicy meat from the photo above.

It's best to have a glass of Apple wine /cider (S$8 for 0.3 l) with the fatty pork knuckle.

The only thing I didn't like was this German Cinnamon Rice Pudding served with Vanilla sauce which came with the set lunch. Maybe I was too full, but the rice and cinnamon taste like some Nonya Kueh. Will try to order something else next time for dessert.

Overall, great service, excellent food at good price. Will definitely come back for more.
